Banana Cake (Can be also Vegan!)

A classic yet delicious recipe for banana cake or better banana bread! The resulting bread has the perfect moisture and flavor, while being very healthy and nutritious with less calories – the ideal breakfast to start your day!

Our recipe does not have eggs and butter, therefore by replacing common yogurt with plant-based yogurt, this recipe can also be made absolutely vegan!


  1. Flour (can also be gluten-free as well as whole-grain) – 245 grams or 1 ¾ cups
  2. Dark brown sugar – 75 grams or 1/3 cup
  3. Baking powder – 2 teaspoons
  4. Baking soda – 1 teaspoon (this step can also be skipped however the final result might be more “moist”)
  5. Salt – 1 pinch
  6. Sunflower oil or coconut oil (choose a neutral-flavored oil, the oil can also be replaced with butter or apple sauce – 75 ml or 1/3 cup
  7. Vanilla – 1 teaspoon
  8. Common or plant-based yogurt – 82 grams or 3/8 cup
  9. Oat milk (or another plant-based milk) – 56 ml or 1/4 cup
  10. Nutmeg grating
  11. Ripe bananas – 3 or 4 depending on the size


Additional optional ingredients for ideal flavor:

  • Cinnamon – 1 teaspoon
  • Chocolate chips – 64 grams or 1/2 cup or
  • Nuts – 64 grams or 1/2 cup or
  • Raisins – 64 grams or 1/2 cup


Pre-heat your oven at about 180 C.

In the bowl of your mixer pour all solid ingredients – flour, baking powder, baking soda, sugar, vanilla, salt, nutmeg along with the optional ingredients of your choice (cinnamon/chocolate chips/nuts/raisins) and start your mixer at a slow stirring.

In a second bowl, mash the bananas and leave it aside.

During the mixer stirring, start adding one by one all liquid ingredients – sunflower oil, yogurt, oat milk and finally add the bananas. Rise stirring volume to medium until all ingredients are blended and stop mixing. If your mixture seems too solid add a little bit of plant-based milk, while if it seems more liquid add a little bit of flour.

Pour the mixture into one or two aluminum bread pans and bake it for about an hour. Before taking the bread out of the oven, insert toothpick or knife in its center and if it comes out clea, then it’s ready.

As a final step, take the bread out of the pan and let it cool and sit on a cake rack for about 15 minutes before slicing.

Tips for storage: Keep your bread on a platter up to 3 days outside the fridge (pay extra attention during the summer months) and then keep it in your fridge for about a week.
